Beetroot marmalade tartlet, fresh chevre, baby watercress, orange & coriander dressing (V)

Pan grilled barramundi, hot & sour eggplant, urid dhal puree (GF)


Grass fed beef tenderloin, cauliflower & parmesan gratin, grilled broccolinni & cabernet jus (GF)

 

Twice cooked pork belly, roasted carrot puree, smoked butter beans, pickled walnut & apple salsa, thyme jus (GF)

 

Sous vide local chicken breast, roasted garlic & tarragon brioche bread pudding, green peas & beans, jus gras

 
Roast lamb rump, caramelised fennel & cherry tomatoes, dukkah crumble, date labneh (GF)

Leatherwood honey creme brûlée, pistachio biscotti

I haven’t had much of a chance to talk to you since our wedding, but I did want to pass on our sincere thanks for your wonderful catering throughout the day. We had many guests comment on the high quality and variety of food and the presentation.
We also appreciated the efforts of your very professional catering staff. They were always there in the background, ever alert to someone waving a hand for attention or clearing used plates. I was particularly impressed by how they came and looked after Karen and I with food, after we came back from the ceremony to the reception. We also had one special diet dish required by a guest and that was delivered seamlessly.

 From our point of view, we felt we got 110% effort and we’d recommend the progressive catering team to anyone. You put us at ease from the very start, several weeks before the event, inspecting our site and providing samples of the delicious food to be provided. We also attended a large luncheon function some months prior to our wedding so that we could observe you in action. It built our confidence that you catered for that event flawlessly too.

 So recognition where it is due; thank you once again for a superb job on our special day!
